Named “Effet Mer”, this concept will replace, from June 9, the iconic gourmet restaurant “Les Trois Forts” until the end of September.
The vocation of this place is to offer a real “stage” of the know-how of the creators, artists and suppliers of our region. In fact, from decoration to the menu, the highlight is given to men and women who are passionate about their works, our region and craftsmanship.
“Effet Mer” then becomes a scene, a concept of restoration directly inspired by raw, local and marine resources.
On the menu, Chef Dominique Frérard sublimates these resources. The DNA of the dishes is then inspired from the surrounding landscape: the creeks, the sea, the sun …

For Effet Mer, the highlight is given to products that he cooks with respect and passion. The DNA of the dishes is then inspired from the surrounding landscape: the creeks, the sea, the sun … We thus find candied Salonais black pork belly from Jérôme Crouzet, a delicious vegetable tart from the Dublé family in Aureille or the fish of the day prepared as a tartare. Please note: all the fruits and vegetables on this menu are from organic farming.
